The Big Fresh Catering Food Company ensure it’s team are well and truly Allergen Aware.

From 13 December 2014, all food businesses – from high-end restaurants to stadium burger stalls – must be able to give clear and accurate information about the allergens present in every product they serve to customers; ‘I don’t know’ will not suffice and could lead to significant fines.

The Food Information for Consumers Regulation 2014 mandates that businesses must be able to communicate which dishes contain any of 14 specified allergens, including shellfish, soya beans, milk and celery, either through accurate written information provided to customers, for example on the menu or a noticeboard, or by signposting clear instructions explaining how they can obtain that information from staff.

  • All 14 major allergens are covered and we work with parents/ customers to make sure we can provide for any other allergens that their children or customers may have. Cooks have a full allergen listing of all products that are delivered to their kitchens.
  • All kitchen staff are trained in accordance with the legislative requirements associated with catering procedures, to certify that food is prepared in a protected environment. In addition, the service provides a further wide ranging provision of training to assist them in their day to day activities.

Scores on the doors are very important to us to maintain a high standard across our kitchens. We work closely with Environmental Health Officers to validate our procedures.
